1 lb Ground Beef
1 Onion, chopped
2 Carrots, diced
2 Celery stalks, diced
4 cups Beef Broth
1 cup Milk
2 cups Cheddar Cheese, shredded
Salt & Pepper, to taste
Brown the Meat: In a large pot, over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
Add Vegetables: Stir in the chopped onion, diced carrots, and celery. Cook until the vegetables are tender, approximately 5-7 minutes.
Pour in Broth: Add the beef broth to the pot, bringing it to a gentle boil. Once boiling, reduce the heat and let it simmer for about 15 minutes.
Mix in Milk: Stir in the milk and let the mixture return to a simmer. Adjust seasoning with salt and pepper.
Add Cheese: Gradually add shredded cheddar cheese, stirring constantly until melted and creamy.
Serve: Once the cheese is melted and the soup is thickened to your liking, serve hot. Garnish with extra cheese, croutons, or fresh herbs if desired.
