Ultimate Copycat Jason’s Deli Irish Potato Soup

A creamy and rich soup perfect for chilly days, made with simple, everyday ingredients.

  • 2 tablespoons Butter
  • 1 medium Onion, finely chopped
  • 1 medium Carrot, finely chopped
  • 2 ribs Celery, finely chopped
  • 3 cloves Garlic, minced
  • 3 large Russet Potatoes, cut into small cubes
  • 4 cups Chicken Broth
  • 1 cup Milk
  • 1 cup Heavy Whipping Cream

Instructions

  1. Prepare the Vegetables: Wash and peel the vegetables, cutting the potatoes into small cubes, and finely chop the onion, carrot, and celery. Mince the garlic.
  2. Sauté the Vegetables: In a large pot, melt the butter over medium heat, add the onion, carrot, celery, and garlic, and cook for about 5-7 minutes until softened.
  3. Add the Potatoes and Broth: Add cubed potatoes and chicken broth, bring to a boil, then reduce heat to low and simmer for 15-20 minutes until the potatoes are tender.
  4. Blend the Soup: Use an immersion blender or a regular blender to blend the soup until smooth and creamy.
  5. Add Dairy: Stir in milk and heavy whipping cream, adjust seasoning to taste with salt and pepper.
  6. Simmer and Serve: Allow to simmer for an additional 5 minutes, then ladle into bowls and garnish as desired.
